Soy Glazed Slow Cooked Pork Belly with a Grain Mustard Dressing

 

 

Marinade:

Dark Soy sauce 40 ml

Half a spoon honey

Finely Chopped Garlic 2 gms

Finely Chopped lemon grass 20 gms

Finely Chopped red chillies 4 gms

Olive Oil 60 ml

 

Whisk it together

Marinate the Sous Vide Pork Belly in this mix for an hour in the fridge; pan sear on both sides for 2 mins, slightly heat in the oven and serve with Grain Mustard Dressing

 

Grain Mustard dressing

Grain Mustard 40 gms

Dijon mustard 15 gms

Honey  20 ml

Soy sauce  15 ml

Olive oil 20 ml 

Water - to adjust consistency

 

Whisk everything and spoon over the seared Sous Vide Pork Belly, garnish with coriander & sliced fennel !
