Our master butcher was the Head of Production and R&D in one of the largest meat processing companies in the world and not only brings with him a wealth of knowledge with regards to innovation but also about international production practices and food safety.

What are the systems in place with to ensure food safety and proper hygiene?

Lion Fresh is a wholly owned subsidiary of Primo Foods Pvt Ltd which is a certified ISO 22000 company as well as a FSSAI approved manufacturer which maintains HACCP food safety protocols. Primo Foods also abides by the guidelines of the Codex Alimentarius which is a collection of internationally recognized standards, codes of practice, guidelines, and other recommendations relating to foods, food production, and food safety. All production and packing happens at the audited, authorized and licensed factory of Primo Foods Pvt Ltd.

What is the importance of cold chain and in particular the role plays in it?

Managing a food supply chain has difficult challenges that require all participants in the supply chain to adhere to stringent operational practices in order to ensure the product is safe for consumption once it reaches the end consumer. When fresh or frozen foods are being transported, especially in a global supply chain, the procedures and equipment needed to maintain the integrity of the cold chain are elevated to a more critical role.

Each production room has a specific temperature level which is consistently regulated. Once packed, the product is shifted through refrigerated vehicles directly to the Lion Fresh distribution hubs where the product is immediately transferred to fridges and freezers awaiting dispatch. The primary reason Lion Fresh supplies short distances from the hubs is so the temperature for the products is within the prescribed levels to ensure the cold chain remains in tact.

Is the Pork from safe to eat?

All our pork is imported from farms across the UK and Ireland. As a business we experimented with Pork from all over the world however the consistency and quality that we received from these farms impressed us the most. We also believe in the stringent quality norms present in these countries as well as their far superior methods of breeding. You can also visually notice the lower levels of fat in the meat of the imported pork versus pork sourced locally.

 What are the quality checks that are done on the pork to ensure it is safe to eat?

There are two stage us of tests done for the pork to qualify our production.

Firstly the pork is tested prior to leaving the UK. An Official Veterinarian has to sign off on the following conditions by providing a certified Health Certificate:

      • The meat comes from farms and their respective units accredited for export by the country
      • The animals from which the meat has been produced originate from the country itself
      • The meat satisfies the following requirements
      • The country is free from swine vesicular disease, African swine fever, rinderpest, Aujeszky’s disease, foot and mouth disease (Type C, Sat 1,2,3) and vesicular stomatitis;
      • The consignment comes from animals which were bred and kept in an establishment where the various diseases have not been reported during the last two years prior to the date of processing.
      • The source pigs have never been fed with feeds produced from internal organs, blood meal and tissues of ruminant origin
      • Fresh packing material is used and satisfies the necessary sanitary hygienic requirements laid down in European Union hygiene regulations

The pork is further test upon arrival by the FSSAI & AQCS and Primo Foods quality assurance and microbiology teams. The microbiological tests are also done on Total Plate Count, E.coli, Salmonella, Pseudomonas, Staphylococcus aureus, Listeria etc.

How frequently is Primo Foods audited?

Primo Foods is regularly audited by its international institutional clients as well as state regulatory bodies. On average we have a scheduled and unscheduled audits every 3 months.
